Hi,
I just found your blog looking for turkey pepperoni recipes. I was wondering if you still were happy with the recipe you used. I found the same one but was looking for something else because I wanted to make it without nitrates. I worry about cooking for so long at such a low temp without the curatives added. Did you have any problems? Thanks so much.
I really like the recipe just using salt instead of the curing salt. We have had no problems and I read extensively about cooking meat at low temperatures for long hours. It is almost the same as in a crock pot and as long as it is 200 degrees, it should be fine. I also didn't want to add the nitrates. Hope you enjoy!

Thanks Erica. I didn't mean to be "anonymous" before -- really enjoying your blog. Thanks for the info on the pepperoni recipe. I am going to try it this week with buffalo meat and see how it turns out. I'll let you know!
